(about half a medium) russet potato, scrubbed clean, cut into fry-shaped spears¼ cup shredded part-skim mozzarella cheese6 pieces turkey pepperoni (optional: roughly chopped)Optional seasoning: salt1.Preheat oven to 425 degrees.
